DOUBLE GOLD MEDAL (White Wine Category)/ BEST OF SHOW - 2012 American Fine Wine Competition
A wax sealed bottle is a beautiful addition to your wine rack, but can be intimidating when it comes time to open it. This is easier than you may think! Simply plunge your corkscrew through the wax, as if it were not even there. Lift the cork slightly and wipe any wax crumbles from the opening. Pull the cork the rest of the way out and enjoy!
We have produced a video showing how to open wax sealed bottles. Click Here to view the video.

"The bottle is capped in a dark yellow wax, the same color as the wine. It pours with an almost syrupy texture which translates to a really smooth unctuous mouthfeel. It begins with stewed Apricots, honey and walnuts on the nose, very inviting indeed. This is a delicious sweet wine that screams Sauternes, needs a dollop of vanilla ice cream and would totally sort out some foie gras."
61% Semillon, 39% Sauvignon Blanc
Barrel-Fermented and aged for 19 months in 100% new French Oak
This deep yellow-gold hued wine offers aromas of honey, sweet vanilla, apricot nectar, and fragrant flowers. The bouquet is complimented by the toasty notes from the selection of French oak barrels and the aging “on the yeast” for 19 months. The 2009 vintage was ideal for the slow and even growth of the Botrytis, and yielded a wine of exceptional intensity and concentration. The wine is uncommonly viscous and lingers on the palate long after tasting. The natural sweetness leaves a lasting impression that is unmistakably from perfectly overripe wine grapes.
Double Gold Medal, Best of Show Winner (White Wine Category) - 2012 American Fine Wine Competition
Il Passito is a regal dessert wine made from overripe grapes which develop Botrytis cinerea, or “Noble Rot”, shriveling the skins and enhancing sugar, acid, and flavor intensity. This succulent and deliciously spicy white wine is made in the style of some of the world’s greatest dessert wines, such as Sauternes and the “dried grape” white wines of Sicily such as “Passito di Pantelleria”
Food Pairing Notes
A great after-dinner sipping wine, perfect with farm cheeses and sweet preparations of the Sicilian tradition. Its rich concentration and delectable peach and apricot flavours should be enjoyed with dried fruit (especially figs), or foie gras with honey or almond paste on a crostini to show its complex and intriguing aromas and succulent spice. It is very rich on the palate and also ideal with seasonal fresh fruit desserts.
