GOLD MEDAL - 2015 San Francisco Chronicle Wine Competition
91% Cabernet Sauvignon, 6% Petit Verdot, 2% Malbec, 1% Merlot
21 months in 60-gallon Allier and Center of France French oak barrels
Layered aromas of eucalyptus, sage, and green olive with a spicy bouquet of cigar box, cinnamon and nutmeg. Elegant and structured with a supple texture and plush fruit in the mouth, it shows layers of ripe red cherry, juicy berry flavors and mocha just under the surface of young tannins. Finishes with a long, soft aftertaste.
The 2011 vintage Napa Valley Cabernet Sauvignon exhibits Old-World characteristics, with a lean and elegant style and a slightly higher acidity, making it a perfect food wine. Lay down for a few years to reveal softer tanins and more sumptuous fruit.
Food Pairing Notes
This food-friendly Cabernet pairs well with heartier dishes such as prime rib, bison burgers, or chicken with wild mushrooms.
